Fried Maultaschen à la 3 Käse

Ingredients for 3 servings:

  • 8 Maultaschen
  • 2 bags of mozzarella
  • 100 g feta cheese
  • 100 g cheese (Gouda)
  • ½ eggplant(s)
  • 1 can of tomatoes, chopped
  • 1 tube(s) Tomato paste
  • 1 onion(s)
  • some herbs (herbs of Provence)
  • some salt and pepper
  • 1 tsp, heaped curry powder

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Cheese varieties are variable

Sauté the Maultaschen (ravioli) and diced eggplant. Meanwhile, heat the tomato paste and diced tomatoes in a saucepan. Season with seasoning (to taste) and add the eggplant pieces. Also, toss in some mozzarella. Slice the remaining cheese and arrange it on top of the cooked Maultaschen (or a mix). Serve.
