Ingredients for 4 servings:
- 250g spaghetti
- salt and pepper
- 4 m.-sized tomatoes
- 100 g cooked ham, in one piece
- ½ bunch parsley
- ½ bunch chives
- 4 eggs
- 125 ml milk
- 2 tbsp butter

Cook the spaghetti in plenty of boiling salted water for about 10 minutes until al dente. Wash and trim the tomatoes, halve them, remove the seeds, and dice them. Finely dice the ham. Wash the herbs, chop the parsley, and finely chop the chives. Whisk the eggs with the milk and season with salt and pepper. Stir in the diced tomatoes, ham, and half of the herbs. Drain the spaghetti well in a sieve. Heat the butter in two non-stick frying pans and divide the spaghetti between the two pans. Pour half of the egg mixture over each pan, cover, and let set over low heat for 4-5 minutes. Sprinkle with the remaining herbs and serve.
