Fried Meat Loaf with Pea and Carrot Vegetables and Potatoes

The perfect fried meat loaf with pea and carrot vegetables and potatoes recipe with a picture and simple step-by-step instructions.

Meatloaf:

  • 800 g / 6 slices Meatloaf
  • 4 tbsp Flour
  • 1 Ei
  • 1 tbsp Cream
  • 25 g Panko breadcrumbs
  • 0,5 Cup Peanut oil
  • Coarse sea salt from the mill
  • Colorful pepper from the mill

Pea and carrot vegetables:

  • 560 g Frozen carrots (own production!)
  • 440 g Peas frozen
  • 3 tbsp Butter
  • 200 ml Vegetable broth (1 teaspoon instant broth)
  • 5 big pinches Coarse sea salt from the mill
  • 5 big pinches Colorful pepper from the mill
  • 2 big pinches Sugar
  • 10 tbsp Cream
  • 0,25 Cup Sliced ​​parsley
  • 2 tbsp Tapioca starch

Potatoes:

  • 1200 g Waxy potatoes
  • 1 tsp Salt
  • 1 tsp Ground turmeric
  • 1 tsp Whole caraway seeds

Serve:

  • 4 piece Maggi tips for garnish
  • Flakes of butter

Meatloaf:

  1. 2 Halve the slices of meat loaf. Whisk the egg with the cream (1 tbsp). Turn the liver cheese slices in flour, pull them through the egg mixture, turn them in panko breadcrumbs and fry them in a pan with hot peanut oil (½ cup) on both sides until golden-brown. Season on both sides with coarse sea salt from the mill and colored pepper from the mill. Keep the fried meat loaf in the oven at 50 ° C until serving. Bake the rest of the breaded eggs in the pan and cut into quarters.

Pea and carrot vegetables:

  1. Let the peas and carrots thaw a little. Melt the butter (3 tbsp) in a large pan, add the peas and carrots and fry. Deglaze / pour in the vegetable stock (200 ml) and simmer / boil everything with the lid on for about 10 minutes. Season with coarse sea salt from the mill (5 big pinches), colored pepper from the mill (5 big pinches) and sugar (2 big pinches). Add / stir in the cream (10 tbsp) and the chopped parsley (¼ cup). Let everything simmer for a few more minutes and then thicken with the tapioca starch (2 tbsp) dissolved in a little cold water.

Potatoes:

  1. Peel, wash and quarter the potatoes, ground in salted water (1 teaspoon salt) with turmeric (1 teaspoon) and whole caraway (1 teaspoon) cook for about 20 minutes and drain through a kitchen sieve.

Serve:

  1. Serve fried meat loaf with pea and carrot vegetables and potatoes with flakes of butter, garnished with Maggi cabbage tip and breaded eggs.
