Fried mushrooms

Ingredients for 8 servings:

  • 250 g mushrooms, small, brown
  • 250 g mushrooms, small, white
  • 2 sprigs rosemary
  • 4 sprigs of thyme
  • 4 sprigs of oregano
  • stalks of parsley
  • 2 cloves garlic, fresh
  • 1 lemon(s), peel
  • Olive oil, to taste
  • Salt
  • Pepper, black and green, from the mill

Working time approx. 30 minutes; Total time approx. 30 minutes

Antipasto, quick and easy

Clean the mushrooms and fry them thoroughly on all sides in a large pan or teppanyaki pan over high heat in a little oil (they shouldn’t absorb water, but they shouldn’t burn either!). While still warm, transfer them to a bowl and mix with the very finely chopped herbs and garlic. Season with salt and pepper and let them infuse with the oil. The amount of herbs can, of course, be varied depending on your taste and the occasion.
