Ingredients for 3 servings:
- 350g spaghetti
- 60 g ham or salami, diced
- 1 large red bell pepper(s)
- 1 piece(s) ginger root, finely chopped
- 1 garlic clove(s), chopped
- 100 g cheese, diced, e.g. Emmental or Gouda
- 2 eggs
- salt and pepper
- Thyme
- oregano
- ketchup
- 3 tbsp olive oil
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes
Cook the spaghetti in salted water until al dente, drain. Heat the oil in a large pan. Briefly fry the salami or ham cubes with the chopped garlic and ginger. Then add the diced bell peppers and fry them together. Add the spaghetti, mix everything together and fry until golden brown in some spots. Now add all the herbs and spices. Pour over the beaten eggs and mix well. Let it set briefly and then immediately fold in the cheese cubes. Cook everything over a very low heat and let it set and melt. Season and add salt if desired. Finally, serve with ketchup to taste. The dream of my childhood and student days! Add a salad and you have a quick, delicious meal.
