Mexican enchiladas

Ingredients for 4 servings:

  • 500 g minced meat
  • 1 onion(s)
  • 2 bell peppers
  • 1 can of corn
  • 1 can of beans
  • 4 tomatoes
  • 1 can of tomatoes, chopped
  • 1 chili pepper(s)
  • some salt and pepper
  • Garlic
  • cumin
  • Paprika powder
  • 8 tortillas
  • n. B. Cheese, grated

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Season the ground beef and brown it well, then add the chopped onion. Now add the diced bell pepper, corn, beans, and tomatoes, and fry briefly. Gradually add the can of chopped tomatoes; less may be enough; it shouldn’t become too runny. Finely chop the chili and simmer. Season to taste with the other spices; anything from mild to fiery is fine. Serve with tortillas—which are easy to make yourself; there are good recipes in the database—and cheese. Also delicious as a vegetarian version without the ground beef!
