Fried noodles with vegetables and egg

Ingredients for 3 servings:

  • 200g spaghetti
  • 4 garlic cloves
  • 1 piece(s) ginger root, fresh
  • 3 tbsp sesame oil
  • 1 small zucchini
  • 1 small carrot(s)
  • 3 m.-sized onion(s)
  • 3 eggs
  • 5 tbsp soy sauce
  • 1 tbsp sambal oelek
  • Salt
  • Spice mix (Asian)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Prepare the spaghetti according to the package instructions. Peel and finely chop the garlic and ginger. Peel the carrot and zucchini and cut into thin sticks. Peel the onions and slice them into strips. Heat the oil in a wok or large frying pan. Lightly fry the garlic, ginger, and onions. Add the vegetable sticks and noodles and cook. Whisk the eggs with a little salt and 1 tablespoon of soy sauce. Add to the wok and stir-fry until the eggs are set. Season to taste with the remaining soy sauce, sambal oelek, and Asian spice mix.
