Fried onion rings

Ingredients for 2 servings:

  • 1 large onion(s)
  • 2 tbsp, heaped flour
  • 1 tbsp, heaped cornstarch
  • 1 tbsp, heaped mashed potato powder
  • ½ tsp baking soda or baking powder
  • Salt
  • paprika
  • 100 ml carbonated water

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

It’s best to mix the dry ingredients in a blender. Add the soda water and mix or stir well. You should end up with a thick batter. Transfer the batter to a shallow dish. Cut the onion into approximately 0.5 cm wide slices and then into rings. Heat oil in a pan to 180°C, dip the onion rings in the batter, let them drain slightly, and fry for 2-3 minutes. Place on a wire rack. They’ll be very crispy and delicious even cold. The batter can also be used for other deep-fried vegetables.
