Ingredients for 2 servings:

  • 500 g parsley root(s)
  • 2 m.-sized onion(s)
  • 80 g smoked bacon
  • salt and pepper
  • Caraway seeds
  • Oil for frying

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Fried Roots Low Carb

Peel the parsley roots and cut into approximately 2-3 mm thick slices. Peel the onions, halve them, and slice them into thin rings. Cut the bacon into small cubes or thin strips. Heat the oil in a large pan and add the parsley roots. Once the roots have taken on some color, add the onions, bacon, and seasoning. Let everything brown well and season again if necessary. This dish is a great alternative to traditional fried potatoes if you’re following a low-carb diet.
