Ingredients for 2 servings:

  • 4 red bell peppers
  • 2 tbsp vinegar (sherry vinegar)
  • 3 tbsp olive oil
  • 3 cloves garlic
  • 3 tbsp parsley, chopped
  • ½ tsp salt
  • Grease for the tray

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Preheat oven, place peppers on a greased baking sheet, and grill on high for 8-10 minutes. Remove the sheet from the oven and cover with a damp cloth. Let rest for 5 minutes. Cut a slit in the peppers at the base of the stem and collect the juice in a container. Peel off the skin, remove the stem, and seeds. Place the peppers in a shallow bowl. Crush the garlic and mix with the parsley, vinegar, oil, salt, and the pepper juice. Pour the marinade over the peppers and let it marinate for about 2 hours. Then serve.
