Fried potato noodles

Ingredients for 4 servings:

  • 800 g potatoes, floury
  • 50 g butter
  • 2 egg yolks
  • 1 tbsp flour
  • 1 tsp salt
  • 2 pinches of nutmeg, freshly grated
  • some olive oil for frying

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Brush the potatoes thoroughly with cold water, place them in boiling water, and cook, covered, for about 30 minutes until tender. Then let the potatoes cool, peel them, and mash them. Melt the butter, but keep it barely warm, and pour it over the potatoes along with the egg yolks, salt, flour, and nutmeg. Knead everything into a smooth dough. With floured hands, form a roll about the thickness of your thumb and cut 5 cm long pasta from it (a dumpling shape). Heat the olive oil in a pan and fry the pasta until crispy, turning occasionally. Serve with chops, sauerkraut, pasta salad, green salad, or pea and carrot salad.
