Ingredients for 2 servings:

  • 800 g potato(s), waxy
  • 100 g bacon, streaky
  • 1 onion(s)
  • 4 eggs
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

Boil the potatoes until tender, let them cool, peel them, and cut them into thin slices. Dice the bacon and fry them in the pan. Remove the diced bacon and fry the potatoes in the cooked bacon. Only turn them over when they are nicely browned on one side. Just before the end, stir in the chopped onion and fry it too. Then add the beaten eggs to the pan, season, stir everything briefly, and let the eggs set. Sprinkle the cooked bacon on top. What NOT to do: – Use warm potatoes. – Replace jacket potatoes with boiled potatoes. – Use floury potatoes. – Cook more than two portions in one pan. – Turn the potatoes over too soon.
