Fried potatoes from Morbio

Ingredients for 4 servings:

  • 1 kg potatoes, waxy
  • 2 tbsp butter
  • 4 tbsp olive oil
  • 4 beef tomatoes, pitted, finely diced
  • 4 cloves garlic, finely sliced
  • 2 limes
  • 300 g mozzarella, diced
  • salt and pepper
  • 2 tsp rosemary

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Gourmet recipe

Wash and dry the potatoes, then slice them unpeeled. Heat the oil and butter in a pan and fry the potato slices for about 20 minutes until golden brown, stirring frequently. Sprinkle with the spices, add the garlic and diced tomatoes, and mix well. Squeeze the juice from the lime and zest the lime. Sprinkle the lime zest over the mozzarella. Loosely fold the cheese into the potatoes and fry for about 3 more minutes. Remove the pan from the heat and drizzle the lime juice over everything.
