Ingredients for 2 servings:
- 2 cup(s) rice (jasmine)
- 2 cups water
- 1 cup crab meat (Crabmeat, Thai)
- 1 egg(s)
- 2 tsp garlic, finely chopped
- 2 tomatoes, meat in small cubes
- ¼ tsp sugar
- 1 tsp fish sauce (Nam Pla)
- 1 tsp soy sauce (Thai light)
- ½ tsp salt
- 3 spring onions, sliced
- 2 tbsp vegetable oil
- Pepper, white
- 1 cucumber(s), sliced
- 1 lime(s), quartered

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes
Thai Fried Rice – Khao Pad Poo
Cook the rice in 2 cups of water and keep warm. Heat oil in a wok or frying pan, add garlic, and cook until golden brown. Add the dry, cooked rice and stir to combine. Stir in the crabmeat, sugar, fish sauce, and soy sauce. Push the rice to the side and crack the egg into the wok. Cover with rice. Once the egg is cooked, stir in the tomatoes, spring onions, salt, and pepper and stir-fry for 2-3 minutes. Arrange on plates and serve with the cucumber slices and lime wedges.
