Fried salsify

Ingredients for 2 servings:

  • 3 tbsp white wine vinegar
  • 1 tbsp flour
  • 500 g salsify
  • 1 onion(s)
  • 1 clove(s) garlic
  • 3 tbsp olive oil
  • 2 tsp capers (drained, jar)
  • some salt and pepper
  • 2 tbsp lemon juice
  • 30 g Italian cheese, e.g. Grana Padano
  • 3 sprigs basil

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

with capers, Italian hard cheese and basil

Mix white wine vinegar, flour, and 1 liter of water. Wash and peel the salsify, trim off both ends, wash again, and cut diagonally into 1 cm thick pieces. Place them temporarily in the vinegar water to prevent discoloration. Peel the onion, halve it, and slice it crosswise into thin half rings. Peel and finely chop the garlic clove. Drain the salsify. Heat olive oil in a large, non-stick pan. Fry the salsify over medium-high heat for 5 minutes, turning occasionally. Add the onion and fry for 3 minutes. Add the garlic and capers, then fry for another 2 minutes. Finally, season with salt, pepper, and lemon juice. Grate the hard cheese into slices. Pick the basil leaves off the leaves. Serve the salsify sprinkled with cheese and basil.
