Celery in oat crust

Ingredients for 4 servings:

  • 1 tuber of celery, approx. 750 g
  • 1 tbsp vinegar
  • some salt and pepper
  • Sesame oil for frying
  • 50 g flour
  • 2 eggs
  • 150 g oat flakes, wholegrain

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Quarter the celery, trim, and cut into approximately 1 cm thick slices. Cook in boiling water with salt and vinegar for 6 minutes. Refresh, drain, and season with pepper. Coat first in flour, then in egg, and finally in the oatmeal. Fry in heated oil over medium heat until golden brown on both sides. Serve with sour cream and lamb’s lettuce.
