Southern Sandwich

Spread both untoasted slices of toast with peanut butter. Top one slice with banana slices. Heat the oil in a pan and fry the bacon until very crispy, then drain on kitchen paper. Place the bacon on the banana slices, then place the second slice of toast on top, buttered side down, and press down lightly. Brush both sides of the sandwich with butter, carefully place in the pan, and fry for about 2 minutes on each side until golden brown and crispy. The peanut butter and banana should be soft. Cut the sandwich diagonally with a large, sharp knife. High in calories but very tasty!
