Fried spiced rice

Ingredients for 4 servings:

  • 500g basmati
  • 1 m.-sized onion(s)
  • 2 tbsp ghee
  • 1 tsp ginger, freshly chopped
  • 1 clove(s) garlic, crushed
  • 1 tsp salt
  • 1 tsp black cumin
  • 3 cloves
  • 3 cardamom pods, green
  • 2 stalk(s) cinnamon
  • 4 peppercorns
  • 750 ml water

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Sort the rice and wash it under running water. Slice the onion into rings. Melt the ghee in a pot and fry the onion in it. Add the ginger, garlic, and salt to the onion in the pot and stir well. Add the rice, cumin, cloves, cardamom, cinnamon sticks, and peppercorns to the pot and fry for 3-5 minutes, stirring occasionally. Add the water and bring to a boil. Reduce heat and simmer, covered, until the water is absorbed and the rice is tender. Transfer the spiced rice to a bowl and serve immediately.
