Fried spicy cucumbers

Ingredients for 4 servings:

  • 500 g cucumber(s), tender
  • 4 chili peppers, dried
  • 4 tbsp oil (sesame oil), dark
  • 20 peppercorns (Sichuan)
  • Salt

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cooking class recipe

Wash the cucumbers thoroughly and halve them lengthwise. Scrape out the seeds with a teaspoon and slice the cucumbers into thin strips about 6 cm long. Halve the chili peppers. Heat sesame oil in a pan or wok. Add the Sichuan peppercorns and chili peppers and fry over high heat until fragrant. Remove the peppercorns. Add the cucumber strips to the oil and fry over high heat for about 2 minutes, stirring. Season with salt, transfer to a plate, and let cool.
