Fried spinach balls

Ingredients for 4 servings:

  • 200 g flour
  • 50 ml vegetable oil
  • 1 pinch of salt
  • 200 g leaf spinach
  • 20 g butter
  • 2 tsp garam masala
  • 1 piece(s) long pepper, Pippali-
  • ½ tsp cumin
  • 500 ml oil (frying oil)

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Indian starter

Combine flour, vegetable oil, salt, and 100 ml of water, kneading vigorously to form a dough. Let it rest under a damp cloth. Briefly blanch the spinach leaves in boiling salted water, then rinse in cold water, squeeze dry, and finely chop. Then sauté in a pan with the crushed pippali, garam masala, and cumin for three to four minutes. Now stir the spinach into the dough. Form the mixture into small balls and fry in hot oil for 15 to 20 minutes. Serve cold with Asian sauces and dips.
