Ingredients for 4 servings:
- 4 trout, ready to cook, approx. 375 g each
- Salt
- 1 tbsp lemon juice
- 8 slices of bacon
- 1 bunch of flat-leaf parsley
- 100 g corn flour
- Black pepper, freshly ground
- 50 g clarified butter
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
Rinse the trout inside and out and pat dry thoroughly. Then season the inside with salt and lemon juice. Slowly fry the bacon in two pans over low heat until crispy and brown. Rinse the parsley, pat dry, and place two sprigs into each trout. Finely chop the rest. Season the cornflour with plenty of pepper and a little salt and toss the trout in it. Remove the bacon from the pans. Add half of the clarified butter to each pan and fry two trout on each side for 5 minutes until crispy and brown. Arrange on a preheated platter and sprinkle with the parsley. Heat the bacon again briefly and then wrap it around the trout. Garnish with a few lemon slices, if desired.
