Ingredients for 2 servings:

  • 1 ½ kg potatoes, waxy, large
  • 2 liters of vegetable oil
  • Salt

Peel the potatoes and cut them into fries. There are special kitchen utensils for this, but with a little practice, you’ll be able to do it without them in no time. It’s important that the fries are rinsed thoroughly, ideally under running water. Now rub them completely dry on a terry cloth towel. Pre-fry the fries in the hot oil of the deep fryer until they are lightly browned. Drain the fries well and let them cool. Finish frying if desired and add salt immediately. This means that fries can be prepared very well in advance. They can wait a few hours from pre-fried until they’re ready.
