delicious with Thai dishes or just on its own….

Cut the peeled garlic into thin strips and let them dry on a surface (plate, board) for 1-2 hours. Bring the oil to a boil in a pot and fry the garlic one at a time in the hot oil. Do not fry all at once, or the garlic will stick together; it is better to fry in smaller batches. Before the garlic gets too brown, remove it from the oil with a small ladle (mine came from an Asian store) and let it dry on kitchen paper. Store the dry (rustling) garlic in a dry place. Sprinkle with salt before serving. Roasted garlic, like roasted onions, is often added to dishes in Thailand. It is also delicious with fondue, cheese evenings, or just on its own.
