Frisian tartlets

Ingredients for 4 servings:

  • 3 sheets of puff pastry, frozen
  • 1 egg yolk
  • sugar, brown
  • 12 tsp plum jam
  • 100 g low-fat curd cheese
  • 1 tbsp lemon juice
  • 30 g sugar
  • 200 ml cream

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Mini puff pastry version of the real Friesentorte

Defrost the puff pastry sheets. Cut in half and then diagonally (makes 12 pieces). Place on a baking sheet lined with baking paper. Brush the pieces with egg yolk and sprinkle with brown sugar. Bake the puff pastry pieces in a preheated oven at 200°C for approx. 10-15 minutes until golden brown. Allow to cool. In the meantime, mix the quark with lemon juice and sugar. Fold in the whipped cream. Shortly before serving, cut the puff pastry triangles crosswise, spread 1 teaspoon of plum jam on the base of each triangle, top each triangle with a dollop of quark cream, and place the sugar topping on top. Serve immediately.
