Frittata with potatoes

Ingredients for 2 servings:

  • 4 large eggs
  • 3 tbsp, heaped chives, chopped
  • 3 m.-sized potatoes (jacket or boiled potatoes)
  • 4 tbsp Parmesan, freshly grated
  • 3 tbsp, heaped smoked ham, diced
  • Fat for the mold

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

Grease a baking dish. Cook the potatoes for about 20 minutes. Then slice them thinly and add them to the dish. Combine the eggs with the Parmesan cheese and chives, and season with salt and pepper to taste. The smoked ham adds a bit of salt, so be careful with the salt. Pour the egg mixture over the potatoes and sprinkle the ham on top. Bake the frittata at 180°C (top/bottom heat) for about 25 minutes. Cooking time may vary. It’s important that the egg is completely set.
