Ingredients for 4 servings:
- 100 g flour
- 200 ml milk
- 1 tbsp parsley, finely chopped
- 2 tbsp butter
- salt and pepper

Classic soup garnish – pancake strips – Flädle
Combine the flour with the milk and the very finely chopped herbs, salt, and pepper until smooth. Let it sit for 20 minutes to allow the flour to expand slightly. Fry four thin pancakes one after the other in the butter, roll them up, cut them into bite-sized strips, and add them to the soup just before serving. Nutmeg or another spice can be used instead of pepper. Other herbs can be substituted for the parsley. You can also add an egg yolk—then use less milk.
