Ingredients for 2 servings:
- 1 large egg(s)
- 1 tbsp butter, room temperature
- 100 g semolina (durum wheat semolina)
- 1 pinch of salt
- 1 pinch of nutmeg
Instructions

also called semolina dumplings, semolina noodles or semolina dumplings
Beat the egg and butter until fluffy, add the salt and nutmeg, and sprinkle in the semolina. Mix everything together well to form a firm dough. Scoop out small dumplings with a teaspoon, add them to boiling meat broth, and simmer gently for about 20 minutes. Tip: Don’t let the semolina dough rest; use it immediately after mixing!
