Ingredients for 12 servings:

  • 175 g flour
  • 100 g sugar
  • ½ pack of baking powder
  • 1 packet of vanilla sugar
  • 3 eggs
  • 60 ml oil
  • 90 ml carbonated water
  • 1 lemon(s) , (juice)
  • 150 g powdered sugar
  • Food coloring, green
  • Food coloring, red
  • 12 marshmallows
  • 24 chocolate decorations (drops)

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

Frog cupcakes, children’s birthday party

Place the batter ingredients in a bowl, mix, and pour into a muffin tin. Bake at 180 degrees Celsius for 15-20 minutes. I usually only use the juice of half a lemon, using the remaining juice to thin the icing later for decoration. Halve the marshmallows and stick a chocolate decoration drop onto the sticky side of each. Once the muffins have cooled, mix the icing sugar (you’ll need 10g of the remaining icing sugar for the mouth) with the green food coloring. If the icing is still too solid, add a little more water (or any remaining lemon juice from the batter). Spread the icing on the muffins. Place two marshmallow eyes on each muffin tin and press down lightly. Once the icing dries, the eyes will stick on their own. Finally, mix the remaining icing sugar with the red food coloring and use a spoon to draw a mouth on each muffin.
