Frozen Berry Ensemble with Chocolate Snow Topping on Mascarpone Cream

Ingredients
 

  • 500 g Mascarpone
  • 200 ml Whipped cream
  • 30 Pc. Raspberries
  • 15 Pc. Strawberries
  • 30 Pc. Blueberries
  • 15 Pc. Amarettini almond biscuits
  • 1 Pc. Tonka beans
  • 2 tbsp Powdered sugar
  • 2 tbsp Stresa liqueur
  • 1 Cup Espresso
  • 2 tbsp Amaretto
  • 50 g Chocolate white

Instructions
 

  • Beat the cream until stiff before adding it to the tonka bean that has been rubbed with powdered sugar and half a tonka bean.
  • Now put 2 coarsely crumbled amaretini in a drinking glass, and mix the espresso with the amaretto, a tablespoon of which will now pour over the amarettini, before immediately followed by 2 tablespoons of the mascarpone cream.
  • On top of this cream, put 6 blueberries evenly distributed, which in turn are covered by a tablespoon of cream. Do the same with the raspberries and cover them again with cream, on which the halved strawberries are then draped.
  • Finally, you use a few drops of Stresa liqueur to drizzle over the cream with strawberries before you rub the white chocolate over it with a cheese grater as a snow topping.
  • Now put the glass in the freezer for 30 minutes so that the contents freeze briefly before it is served to the guests with a spoon.
