Fruit curd with rice pudding

Ingredients for 4 servings:

  • 750 ml milk
  • 125 g rice
  • 50 g sugar
  • 2 packets of vanilla sugar
  • 1 pinch of salt
  • 200 ml whipped cream
  • 250 g quark (cottage cheese)
  • 250 g fruit, as desired e.g. fruit mix (can)
  • Powdered sugar, as desired

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Bring the milk to a boil in a non-stick saucepan, add the sugar, salt, and rice. Reduce the heat slightly and simmer for about 20-25 minutes, stirring frequently; the milk should be completely absorbed. Allow the rice pudding to cool. Whip the cream until stiff and mix with the curd cheese and rice pudding. Sweeten to taste, if desired. Stir in the chopped fruit (reserve some for garnish), pour into dessert bowls, and top with the remaining fruit.
