Ingredients for 4 servings:

  • 500 ml milk
  • 2 tbsp sugar
  • 1 pinch of salt
  • some lemon zest, organic
  • 50 g soft wheat semolina
  • 1 tbsp, heaped almonds, chopped
  • 1 egg(s)

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Bring the milk to a boil with sugar, salt, and lemon zest. Stir in the semolina while stirring and simmer for about 5 minutes over very low heat. Add the almonds. Separate the egg and beat the egg white until stiff. Beat the egg yolk with a little water until smooth. First, stir the egg yolk into the hot semolina porridge and bring to a boil briefly. Fold in the beaten egg whites with a whisk. Pour the Flammeri into a bowl or serving jars and let cool. A dollop of jam, fresh berries, or applesauce goes well with it.
