Ingredients for 1 servings:

  • 200 g margarine
  • 125 g sugar
  • 1 packet of vanilla sugar
  • 1 egg(s), size M or L
  • 1 lemon(s), unsprayed
  • 250 g flour
  • 2 tbsp milk, maybe a little more
  • 100 g almonds, sliced
  • 100 g raisins
  • 100 g candied lemon
  • 50 g candied orange peel
  • e.g. powdered sugar

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Grate the lemon zest. Beat the margarine with the sugar and vanilla sugar until fluffy, then add the egg, milk and lemon zest and mix in. Fold in the flour, alternating with the almonds, raisins, candied lemon peel, and candied orange peel. From this step on, it’s a good idea to replace the beaters on your hand mixer with a dough hook and continue with the dough hook, as the almonds and fruit make the dough very firm! Line a baking sheet with baking paper and, using 2 teaspoons, drop small mounds of dough onto the sheet. Bake at 175°C – 200°C on the middle rack for approximately 15-20 minutes. Dust the pastry with powdered sugar, if desired.
