Fruity cucumber and spinach salad

Ingredients for 4 servings:

  • 1 cucumber(s)
  • 2 handfuls of spinach, young
  • 350 Melon(s), Cantaloupe-
  • 1 nectarine(s)
  • 6 basil leaves
  • ½ ball of mozzarella
  • ½ lime(s), the juice
  • 3 tbsp olive oil
  • 1 tbsp maple syrup
  • 1 pinch of five-spice powder
  • Salt

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

with melon and nectarine

Peel the cucumber, quarter it, and cut it into wedges. Tear the spinach into chunks. Deseed the melon, peel it, and cut it into wedges. Deseed the nectarine and also cut it into wedges. Cut the basil into strips. Dice the mozzarella. For the dressing, squeeze the lime and mix all ingredients together. Pour the dressing over the salad just before serving and toss well. Delicious as a side dish to grilled food or with white bread as a main course.
