Ingredients for 4 servings:
- 600 g turkey breast (chicken breast or pork fillet will also work)
- 2 tbsp butter
- 1 tbsp flour
- 1 can coconut milk (unsweetened)
- 3 tbsp applesauce (or freshly grated sweet apple)
- 2 tbsp curry
- Salt
- Milk
- 1 banana(s) (not too ripe)
- 2 peaches, halved (fresh and ripe or from a can)
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Cut the meat into thin strips and sear well on all sides in a little oil. Remove from the pan and keep warm. Lightly season with salt and pepper. Sauté the butter and flour in the pan, stirring constantly (do not brown). Deglaze with the coconut milk, whisking thoroughly. Simmer gently for about 2 minutes. Thin with a little milk, if desired. Add the applesauce, curry, and meat, and let stand for about 3 minutes. Season to taste with salt and pepper, if desired. Add the sliced banana and the peach halves, and heat briefly (do not boil). The banana and peaches can be omitted, or they can be briefly tossed in a little butter in a pan and served on the side. Basmati rice goes well with this dish.
