Ingredients for 6 servings:
- 3 stalk(s) leeks
- 1 bulb(s) of fennel
- 5 stalks celery
- 2 m.-sized apples
- 1 organic orange(s)
- 6 tbsp oil, neutral
- 6 tbsp balsamic vinegar, lighter
- 1 tbsp mayonnaise
- 1 tbsp cream
- 1 dashes lemon juice concentrate
- 1 tsp orange marmalade
- salt and pepper

- 50 g walnuts, peeled
Instructions
Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes
Clean the leeks and cut into very fine rings. Thinly slice the celery stalks, quarter the fennel and finely slice or slice. Core the apples and cut into small pieces. Peel a few strips of orange zest with a vegetable peeler and cut into very fine strips. Remove the remaining zest and cut the flesh into pieces. Mix the vegetables, orange zest, and fruit in a bowl. For the dressing, combine all the ingredients, preferably in a shaker, season to taste, and pour over the salad. Let it sit for a few hours, preferably overnight. Garnish with chopped walnuts.
