Fruity meatball curry

Ingredients for 5 servings:

  • 1 kg minced beef or lamb
  • 150 g breadcrumbs
  • 4 garlic cloves, pressed
  • 4 eggs
  • salt and pepper
  • Curry powder or curry paste to taste
  • 1 can coconut milk
  • 400 ml broth
  • 1 mango(s) or pineapple, prepared and cut into bite-sized pieces
  • oil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Optionally with mango or pineapple

Mix the first four ingredients well, season the meat mixture with salt and pepper, and form into small meatballs. Fry them one at a time in hot oil in a pan until browned and crispy on all sides. Drain on kitchen paper. Once all the meatballs are cooked, add them to a deep pan and season with curry powder to taste. Continue frying for a few minutes, not overheating. Add the fruit, deglaze with the broth and coconut milk, bring to a boil, season with salt and pepper, and simmer for 15 minutes. Serve with rice and a fresh, colorful salad.
