Fruity pomegranate dressing

Ingredients for 4 servings:

  • 1 tbsp grenadine
  • 3 tbsp vegetable broth, cooled
  • 2 tbsp vinegar, (pomegranate cider vinegar or Aceto Condimento bianco)
  • 1 tbsp oil, neutral
  • salt and pepper
  • possibly pomegranate seeds

Instructions

Working time approx. 3 minutes; Total time approx. 3 minutes

goes particularly well with chicory and radicchio

Mix all ingredients, except the oil and pomegranate seeds, thoroughly. Finally, whisk in the oil vigorously, season to taste, and add the pomegranate seeds. This dressing pairs particularly well with slightly bitter salads like chicory and radicchio, or with mixtures of these.
