Ingredients for 4 servings:
- 1 m.-sized onion(s)
- 1 tbsp oil
- 500 g apples
- 600 g potatoes
- 500 ml vegetable stock
- ½ chili pepper(s), pitted
- 1 tbsp crème fraîche
- 4 slices of Parma ham or Serrano ham
- Salt, to taste

Apple and potato soup with chili and ham
Sauté the diced onion with the deseeded and finely sliced chili in the oil until translucent. Add the peeled potatoes and apples, top up with the stock, and cook until tender (add tender apples halfway through the potatoes’ cooking time). Briefly puree the soup; a few pieces should still be visible. Bring back to a boil. Stir in the crème fraîche and season with salt. Cut the ham into large pieces, then briefly roast it under the broiler and add it to the soup. Tip: Instead of roasted ham, add strips of smoked salmon.
