Ingredients for 8 servings:
- 1.2 kg red cabbage
- 1 lemon(s), juice
- 50 g sugar
- ¼ liter red wine, dry, strong
- some red wine vinegar
- ¼ liter port wine
- 100 g goose fat
- 2 onions
- 30 g acacia honey
- 3 oranges, juice
- 100 g cranberries from the jar
- 1 apple
- Salt and pepper from the mill

as a side dish to game and poultry
Trim the red cabbage and cut into thin strips. Season the strips with salt, drizzle with lemon juice, and mix well. This will give the red cabbage a beautiful red color. Finely dice the onions. Peel the apple, cut it into 8-1/2 segments, and slice them. Caramelize the sugar over low heat until golden yellow, then deglaze with vinegar, red wine, and port. Add the goose fat, reduce the liquid slightly, and add the diced onions. Season with salt, pepper, and honey, and reduce the liquid again. Add the orange juice, red cabbage, cranberries, and apple, cover, and sauté over medium heat until soft. This takes 40-60 minutes, depending on the red cabbage. Stir frequently and check that the red cabbage is cooked through. Season again to taste. Let the red cabbage simmer for a few minutes before serving.
