Ingredients for 1 servings:

  • 60 g rice, dry
  • 200 g broccoli, cut into florets
  • 1 onion(s)
  • 1 m.-sized apple
  • 1 bell pepper(s)
  • 2 slice(s) pineapple, fresh (or from a can)
  • 2 tsp tomato paste
  • 1 tsp mustard, hot
  • 1 tsp vinegar
  • 1 tsp oil (lime oil)
  • 1 garlic clove(s)
  • 6 tsp Miracle Whip
  • salt and pepper
  • Sugar

Quick to make, filling – ideal for the office

First, cook the rice and broccoli florets and set both aside to cool. Cut the bell pepper, apple, and pineapple into bite-sized pieces. Peel the onion and finely dice it. Place everything except the broccoli in a bowl and mix with the cooked rice. Add the broccoli last, otherwise it will quickly fall apart when stirred. Make a sauce with Miracle Whip, tomato paste, mustard, vinegar, lime oil, and the crushed garlic. Season to taste with salt, pepper, and sugar. Add the sauce to the rice and vegetable mixture and mix gently. It’s best to let it sit for a few hours for the best flavor. Tip: The flavored lime oil gives the sauce a very special flavor. You can also use “regular” olive or rapeseed oil, or orange or pumpkin seed oil.
