Fruity Rice Salad
The perfect fruity rice salad recipe with a picture and simple step-by-step instructions.
- 500 g Rice
- 200 g Cooked ham
- 1 Can Corn
- 1 small can Mandarins
- 2 Pc. Peppers
- 0,5 bunch Parsely
- 150 g Natural yoghurt
- 0,5 tsp Chili powder
- 1 tsp Ground coriander
- 0,5 tsp Nutmeg
- 2 tsp Vegetable broth powder
- 1 tbsp Olive oil
- 1 tsp Sweet paprika powder
- 1 shot Orange juice
- Salt pepper
- Cook the rice in salted water according to the instructions on the packet. Drain and let cool.
- Dice ham and paprika, finely chop parsley, drain corn. Fold everything under the cooled rice. Halve the mandarins, save the juice for the dressing. Fold in the tangerines as well.
- For the dressing, stir together the yogurt, olive oil, orange juice, half of the mandarin juice and the spices. Mix the dressing with the salad and let it steep for a while. Then season again with salt and pepper.
