Fruity Curry Pineapple Rice Salad

The perfect fruity curry pineapple rice salad recipe with a picture and simple step-by-step instructions.

for the dressing:

  • 1 Can Pineapple
  • 1 Pc. Big apple
  • 1 Can Green peas
  • 1 Pc. Red pepper
  • 1 bunch Spring onion
  • 0,5 bunch Parsely
  • 250 ml Miracel Whip light
  • 6 tbsp Pineapple juice from a can
  • 1 Pc. Lemon, the juice of it
  • 2 tbsp English curry
  • 1 tsp Garam Masala
  • 1 tsp Vegetable broth powder
  • Salt pepper
  1. Cook the rice in salted water or stock according to the instructions on the packet, then drain and let cool.
  2. Mix the ingredients for the dressing, season to taste and, if necessary, add more pineapple juice or Miracel Whip.
  3. Peel and dice the apples, dice the peppers as well. Cut the spring onion into rings. Finely chop the parsley. Drain the pineapple and peas. Mix everything with the rice and pour the dressing over it. Stir well and let steep for at least 30 – 60 minutes before consuming.
  4. If you prefer to eat the salad as a main course instead of a side dish, you can mix in some diced boiled ham or cooked torn chicken.
