Fruity Salad Made from Rocket, Mango, Avocado and Mozzarella Garnished with Pine Nuts

- 3 piece Buffalo mozzarella balls
- 3 piece Avocado
- 3 piece Mango
- 2 bunch Arugula
- 50 g Pine nuts
- 100 Milliliters Orange juice
- 3 tablespoon Olive oil
- 1 tablespoon Honey
- 0,5 piece Lime
- Salt and pepper
- Peel and cut the mangoes and avocados, season the avocado with salt and pepper and drizzle with the ½ lime, pluck and wash the rocket, cut the buffalo mozzarella into cubes and put everything aside.
For the dressing:
- Roast the pine nuts, bring the orange juice to the boil in a small saucepan, then add the honey and olive oil. Let everything boil down for about 10 minutes, season and let cool.
- Layer the mozzarella avocado and mango one after the other, drizzle a little with the dressing. Then put the rocket with the dressing, pour over the other ingredients and finally add a little dressing and the pine nuts.
