Fruity Salad Made from Rocket, Mango, Avocado and Mozzarella Garnished with Pine Nuts

The perfect fruity salad made from rocket, mango, avocado and mozzarella garnished with pine nuts recipe with a picture and simple step-by-step instructions.

  • 3 piece Buffalo mozzarella balls
  • 3 piece Avocado
  • 3 piece Mango
  • 2 bunch Arugula
  • 50 g Pine nuts
  • 100 Milliliters Orange juice
  • 3 tablespoon Olive oil
  • 1 tablespoon Honey
  • 0,5 piece Lime
  • Salt and pepper
  1. Peel and cut the mangoes and avocados, season the avocado with salt and pepper and drizzle with the ½ lime, pluck and wash the rocket, cut the buffalo mozzarella into cubes and put everything aside.

For the dressing:

  1. Roast the pine nuts, bring the orange juice to the boil in a small saucepan, then add the honey and olive oil. Let everything boil down for about 10 minutes, season and let cool.
  2. Layer the mozzarella avocado and mango one after the other, drizzle a little with the dressing. Then put the rocket with the dressing, pour over the other ingredients and finally add a little dressing and the pine nuts.
