Ingredients

- 1,25 Mango
- 2,5 Avocado
- 1,25 tbsp Lemon juice
- 300 g Cocktail tomatoes
- 250 g Arugula
- 2,5 tbsp Oil
- 400 g Chicken breast fillet
- 1 pinch Salt and pepper
dressing
- 2,5 tbsp Lemon juice
- 2,5 tbsp Orange juice
- 5 tbsp Olive oil
- 0,5 tsp Mustard
- 1 pinch Salt and pepper
Instructions

- Peel the mango, cut the flesh from the core in thin slices and then dice. Halve the avocados, remove the stone, scrape the pulp out of the skin with a tablespoon and cut into small pieces. Drizzle the pieces with lemon juice to keep them from discoloring.
- Wash the rocket and tomatoes and cut the tomatoes in half or quarter. Cut the chicken breast fillet into bite-sized pieces.
- Gently mix the tomatoes, rocket, mango, avocado and chicken breast fillet together in a bowl.
dressing
- For the dressing, beat all the ingredients together and pour over the salad before serving.
