Fruity sauerkraut salad

Ingredients for 2 servings:

  • 300 g sauerkraut
  • 2 apples
  • 2 carrots
  • ½ lemon(s), the juice
  • 1 small onion(s), red
  • 4 tbsp cream
  • 2 tbsp oil (sunflower oil)
  • Salt and pepper, white
  • Sugar

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Tear the sauerkraut apart and chop it slightly. Peel and core the apples. Peel the carrots and finely grate them with the apples. Mix the grated carrots with the sauerkraut. Immediately sprinkle with lemon juice to prevent the apples from discoloring. Peel the red onion, slice it into thin strips, and add it to the salad. Toss the salad ingredients with the cream and sunflower oil and season with iodized salt, white pepper, and a little sugar. Serve the salad on two plates. Serve with wholegrain bread.
