Ingredients for 1 servings:

  • 5 eggs
  • 250 g sugar
  • 1 packet of vanilla sugar
  • 125 ml water
  • 125 ml oil
  • 150 g flour
  • ½ pack of baking powder
  • 150 g nuts, ground
  • 2 cups of crème fraîche
  • 5 tbsp gelling sugar
  • 2 cups of cream
  • 3 glasses of fruit (Fruchtikus – variety to taste)
  • 4 sheets of gelatin
  • 3 tbsp rum
  • Grease for the tray
  • Flour for the baking sheet

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Beat the eggs, sugar, and vanilla sugar until frothy. Gradually stir in the remaining ingredients. Spread the batter onto a greased and floured baking sheet. Bake in a preheated oven at 170°C for about 30 minutes. Mix the crème fraîche with the gelling sugar. Whip the cream and fold in. Spread over the cooled cake. Blend the three glasses of Fruchtikus. Dissolve the gelatin in rum and stir into the fruit purée. Spread over the cream. Refrigerate until ready to serve.
