Fruity-spicy pineapple sauce

Ingredients for 2 servings:

  • 200 g pineapple, fresh
  • 1 shallot(s), peeled
  • n. B. Chili pepper(s) without seeds, add to taste
  • ½ tbsp oil
  • 100 ml water
  • salt and pepper
  • brown cane sugar
  • Lime juice

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Finely dice the pineapple, peeled shallot, and chili pepper. Sauté in heated oil. Add the water and simmer over low heat until softened. Purée with a hand blender; the sauce should have a thick consistency. Season to taste with salt, pepper, cane sugar, and lime juice. Heat gently again before serving. Goes well with rice and couscous, and if you’re not vegetarian/vegan, with poultry and fish.
