Ingredients for 4 servings:

  • 400 g vegetables (summer vegetables), frozen, cooked
  • 100 g zucchini, finely chopped
  • 50 g leek, cut into rings
  • 100 g bread(s) (wholemeal bread), soaked and squeezed
  • 1 egg(s)
  • 3 tbsp flour
  • 3 tbsp breadcrumbs
  • 2 tbsp semolina
  • 200 g potatoes, cooked, mashed
  • 1 garlic clove(s), finely chopped
  • 2 tbsp parsley, finely chopped
  • salt and pepper
  • Oil for frying

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Combine all ingredients except the parsley. Season with salt and pepper and knead well. Form into patties and fry in hot oil until light brown.
