Fusilli with leek sauce

Ingredients for 4 servings:

  • 400 g pasta
  • 400 g leek
  • 100 g bacon
  • 200 ml white wine
  • 200 ml beef stock
  • 50 g Parmesan, grated
  • 1 bunch parsley, flat, chopped
  • salt and pepper
  • 1 tbsp olive oil

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Cook the pasta in salted water. Meanwhile, dice the bacon and fry until crispy, remove from the fat, and set aside. Add a spoonful of oil to the pan and sauté the leek strips for two minutes. Deglaze with the wine and stock. Stir in the salt, pepper, and chopped parsley. Melt the grated cheese in the sauce, stir in the cooked pasta, and serve sprinkled with the bacon cubes. If serving as a pasta course (or as an appetizer) in a meal, the ingredients are sufficient for 8-10 servings.
