Ingredients for 40 servings:

  • 20 cardamom pods
  • 3 cinnamon sticks
  • 4 bay leaves, dried
  • 2 tbsp black peppercorns
  • 4 tsp cumin (cumin seeds)
  • 2 tsp cloves, whole
  • 2 tsp nutmeg, freshly ground

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 3 minutes; Total time approx. 18 minutes

Indian spice

Split the cardamom pods and crush the small seeds in a mortar and pestle. Crush the bay leaves and cinnamon sticks and place them in a bowl. Toast all ingredients, except the freshly ground nutmeg, in a dry frying pan over medium heat for 2-3 minutes. Return everything to the bowl, let it cool, and then grind it in a food processor. Add the ground nutmeg and fill everything into sterilized jars and label them. This makes approximately 40 g. This spice blend goes well with Indian dishes and also makes a lovely gift for those who enjoy cooking.
